Hello everyone.
I made a very tasty , crunchy and healthy cauliflower dish. I'm a vegetarian so whenever I see vegetables that can be transformed to something great tasting, I go crazy. So now that cauliflowers are in season, I bought a few and packed them well in newspapers before storing them in the refrigerator to keep them longer.
This oven roasted cauliflower is a simple yet easy to make dish. The ingredients can also vary according to your taste buds. Here's the Indian version.
1 cleaned cauliflower , cut into medium pieces
1 or two cloves of garlic crushed.
1 tsp of cumin powder
1 tsp of coriander powder
1 tsp of chilly powder or flakes ( adjust it to the heat you want)
1/2 tsp of turmeric powder , optional. ( I want an anti cancer in all my dishes)
1/2 tsp of freshly grounded black pepper, optional.
( don't add this if you are using chilly powder as then the heat will be too much )
Salt to taste
Coriander leaves chopped to garnish
Instruction:
1. Mix everything in a baking pan or mould except salt and coriander leaves, leave it for 5 minutes. You may sprinkle a few drops of water when mixing if it's too dry. The juice of the crushed garlic should be enough though.
2. Roast it in oven at 150 c for 13 minutes.
3. Take it out and transfer the roasted cauliflower immediately to a clean and dry plate so the steam within the flowers don't make them soggy.
4. Now garnish it with salt and coriander leaves.
