Oven roasted cauliflower from rathod kitchen


Hello everyone.

I made a very tasty , crunchy and healthy cauliflower dish. I'm a vegetarian so whenever I see vegetables that can be transformed to something great tasting, I go crazy. So now that cauliflowers are in season, I bought a few and packed them well in newspapers before storing them in the refrigerator to keep them longer.

This oven roasted cauliflower is a simple yet easy to make dish. The ingredients can also vary according to your taste buds. Here's the Indian version.                                                                                                                                           



1 cleaned cauliflower , cut into medium pieces

1 or two cloves of garlic crushed.

1 tsp of  cumin powder

1 tsp of coriander powder

1 tsp of chilly powder or flakes ( adjust it to the heat you want)

1/2 tsp of turmeric powder  , optional. ( I want an anti cancer in all my dishes)

1/2 tsp of freshly grounded black pepper, optional.
( don't add this if you are using chilly powder as then the heat will be too much )

Salt to taste

Coriander leaves chopped to garnish



Instruction:

1. Mix everything in a baking pan or mould except salt and coriander leaves, leave it for 5 minutes. You may sprinkle a few drops of water when mixing if it's too dry. The juice of the crushed garlic should be enough though.

2. Roast it in oven at 150 c for 13 minutes.

3. Take it out and transfer the roasted cauliflower immediately to a clean and dry plate so the steam within the flowers don't make them soggy.

4. Now garnish it with salt and coriander leaves.

  1. Combine the water, apple juice, and apples in a saucepan. Bring to a boil over high heat, and stir in the rolled oats and cinnamon. Return to a boil, then reduce heat to low, and simmer until thick, about 3 minutes. Spoon into serving bowls, and pour milk over the servings.

SWEETS RECIPE - WHOLE WHEAT LADDUS

I love nibbling laddus or energy bites as they give instant energy and keep you charged. I don’t know why I have sudden urge to eat something sweet once I am back from office around 11:40 PM or so.  Satisfying my cravings for sweet and also to watch calorie count is little challenging and I am sure most of you would agree with me. On a mission to satisfy my cravings and to make something sweet with minimal ingredients, I indulged in these whole wheat laddus.

Time Chart:-
Preparation Time    - 10 Mins
Cooking Time           -15 Mins
Yields                        - 8 to 10 balls
Essential Ingredients:-
Whole wheat flour:1 and 1\2 cup
Ghee:3\4 cup ( lukewarm ) and for frying
Powdered sugar:1 and 1\2 cup
Almonds:15-20 ( chopped )
Cashew nuts:15-20 ( chopped )
Coarse cardamom powder:2 tsp
Pistachios:For Garnishing
Procedure:-

  1. Add 3 tbsp ghee in whole wheat flour and mix nicely with your fingers. Knead a tight dough using warm water.
  2. Keep covered for 10 minutes. Knead again for a minute and divide the dough into 6 pieces. Make balls of the dough and roll into 1 cm thick disc.
  3. Heat ghee in a pan and deep fry the discs on low - medium heat till they are golden brown. Keep the fried discs covered till they cool down.
  4. Meanwhile, fry the chopped almonds and cashew nuts in a tbsp of ghee. Keep aside. Break the discs into small pieces and coarsely grind in a blender.
  5. Add the remaining ghee in a pan and add the ground mixture. Fry the mixture for 2-3 minutes on medium heat.
  6. Add the fried dry fruits, powdered sugar and cardamom powder in the mixture and make small ladoos.
  7. Store in an airtight container for 2-3 days.
